Dry brining involves covering the entire outside of a roast liberally with salt and other seasonings, and then letting it sit uncovered in the fridge, sometimes for many days until its time to cook.

Cooking a roast is kind of nerve-wracking. All the responsibility that accompanies that formidable hunk of meat is a burden, and let's be honest, a roast is never cheap. What if it's overdone? What if the center is still cold but the exterior is tough? That's a lot of pressure.

One of the best methods for steak: start it low, cook it slow, then quickly sear or grill for a beautiful crust.
